Caramelised Onion and Cheese Tarts

Caramelised Onion and Cheese Tarts are a delightful and easy-to-make dish, perfect for cooking in an air fryer.

Ingredients

  • 320g ready-rolled puff pastry sheet, chilled
  • 2 medium brown onions, about 300g total, thinly sliced
  • 1 tbsp olive oil
  • 15g butter
  • 1 tsp soft brown sugar
  • 1 tsp balsamic vinegar
  • 1 tsp fresh thyme leaves, or ½ tsp dried thyme
  • 80g mature Cheddar, grated
  • 40g soft goat’s cheese, crumbled
  • 1 tsp Dijon mustard
  • 1 egg, beaten, for glazing
  • Plain flour, for dusting
  • Fine sea salt and freshly ground black pepper
  • Optional: 1 tsp chopped chives or parsley

Method

  1. Put sliced onions, olive oil, butter, brown sugar, thyme, salt, and pepper into a heatproof dish.
  2. Air fry at 160°C for 18–22 minutes, stirring every 5 minutes, until onions are soft and glossy.
  3. Stir in balsamic vinegar and air fry for 3–4 more minutes until sticky.
  4. Cool onions on a plate for at least 10 minutes.
  5. Unroll puff pastry and cut into squares or rectangles.
  6. Score a 1cm border around each piece and prick the center with a fork.
  7. Brush center with Dijon mustard and spoon on cooled onions.
  8. Scatter grated Cheddar and crumble goat’s cheese on top.
  9. Brush pastry borders with beaten egg.
  10. Preheat air fryer to 190°C for 3 minutes.
  11. Place tarts on parchment in the basket with space between them.
  12. Air fry at 190°C for 8-13 minutes until golden and firm.
  13. Rest tarts on a wire rack for 3–5 minutes before serving.
  14. Sprinkle with chives or parsley if using.
