Crispy Avocado Corn Fritters
These crispy avocado corn fritters are a delightful blend of creamy avocado and sweetcorn, with a craggy, golden exterior. The air fryer is perfect for this dish, as it quickly sets the crumb while keeping the inside soft and rich, preventing the avocado from slumping or the sweetcorn from releasing too much moisture.
Ingredients
- 1 large firm-ripe avocado, about 180g flesh, peeled and stoned
- 160g sweetcorn, drained very well if tinned, or thawed and patted dry if frozen
- 2 spring onions, finely sliced
- 1 small garlic clove, finely grated
- 1 tbsp lime juice, plus ½ tsp finely grated lime zest
- 1 medium egg, beaten
- 55g plain flour
- 20g cornflour
- ½ tsp baking powder
- ½ tsp ground cumin
- ¼ tsp smoked paprika
- ½ tsp fine sea salt, plus a little extra for finishing
- ¼ tsp black pepper
- 1 tbsp chopped fresh coriander (or flat-leaf parsley if coriander is not to your taste)
- 60g panko breadcrumbs (or fresh white breadcrumbs dried briefly in a low oven)
- 1½ tbsp olive oil or rapeseed oil, ideally in a spray bottle or brushed on lightly
Method
- Drain the sweetcorn thoroughly, then spread it on kitchen paper and press away surface moisture.
- Halve, stone and peel the avocado, then mash about two-thirds of it in a bowl, leaving the remaining third in small 1cm chunks.
- Stir in the lime juice and zest straight away, then add the garlic, spring onions, coriander, cumin, smoked paprika, salt and pepper.
- Add the beaten egg and mix until just combined.
- In a separate small bowl, combine the plain flour, cornflour and baking powder, then fold this into the avocado mixture.
- Fold in the dried sweetcorn gently, trying not to crush every kernel.
- If the mixture feels too wet to hold a mound on a spoon, add 1 extra tbsp plain flour; if it feels stiff and doughy, add 1 tsp lime juice or water.
- Tip the panko breadcrumbs onto a plate.
- Scoop 8 small portions, roughly 45–50g each, then shape each one into a squat patty about 1.5cm thick.
- Press both sides and the edges into the panko.
- Chill the crumbed fritters for 15 minutes if you have time.
- Preheat the air fryer to 190°C for 3 minutes.
- Add parchment to the basket after preheating, not before, unless it is weighted down with food.
- Arrange the fritters in a single layer with at least 1cm between them.
- Spray or brush the tops lightly with oil, using more on any dry-looking breadcrumb patches.
- Air fry at 190°C for 6 minutes, then turn carefully with tongs or a fish slice.
- Spray or brush the second side with a little oil.
- Cook for a further 4–6 minutes, until the fritters are deep golden in patches and feel set at the edges.
- Rest for 3 minutes before serving.
