Crispy Green Pea Fritters

Crispy green pea fritters are a delightful snack, perfect for air frying to achieve a crunchy exterior and tender interior.

Ingredients

  • 300g frozen peas, defrosted
  • 2 spring onions, finely sliced
  • 1 small garlic clove, finely grated
  • 1 large egg, beaten
  • 70g plain flour
  • 20g cornflour
  • 1 tsp baking powder
  • 40g mature Cheddar, finely grated, or feta, crumbled
  • 2 tbsp chopped fresh mint
  • 2 tbsp chopped fresh coriander or flat-leaf parsley
  • Finely grated zest of ½ lemon
  • ½ tsp fine sea salt
  • ¼ tsp freshly ground black pepper
  • ¼ tsp chilli flakes, optional
  • 1½ tbsp olive oil or rapeseed oil, for brushing or spraying
  • 2 tbsp Greek yoghurt, to serve, optional
  • Lemon wedges, to serve

Method

  1. Pat the defrosted peas very dry using a tea towel or kitchen roll.
  2. Mash two-thirds of the peas in a bowl, leaving some chunks, and stir in the remaining whole peas.
  3. Add spring onions, garlic, egg, flour, cornflour, baking powder, cheese, herbs, lemon zest, salt, pepper, and chilli flakes. Mix until combined.
  4. Rest the mixture for 10 minutes at room temperature.
  5. Preheat the air fryer to 190°C for 3 minutes.
  6. Shape the mixture into 10 fritters, about 6cm wide and 1.5cm thick.
  7. Lightly brush or spray the air fryer basket with oil and place the fritters in a single layer.
  8. Air fry at 190°C for 7 minutes, turn the fritters, and cook for another 4 to 6 minutes until golden and crisp.
  9. Rest the fritters on a wire rack for 3 minutes before serving with yoghurt and lemon wedges.
