Crispy Smoked Gouda Fritters

These smoked gouda fritters are a delightful combination of crispy edges and a molten, cheesy centre. The air fryer is perfect for this recipe, as it quickly crisps the breadcrumb coating while keeping the cheese from escaping, thanks to its fast convection and a light mist of oil.

Ingredients

  • 250g smoked gouda, coarsely grated
  • 350g cold mashed potato
  • 2 spring onions, finely sliced
  • 1 tsp Dijon mustard
  • ½ tsp smoked paprika
  • 1 egg yolk
  • 25g plain flour, for the fritter mixture
  • 50g plain flour, for coating
  • 2 medium eggs, beaten
  • 110g panko breadcrumbs
  • ½ tsp fine sea salt
  • ½ tsp freshly ground black pepper
  • Neutral oil spray
  • Optional: 1 tbsp finely chopped chives or parsley

Method

  1. Put the cold mashed potato in a mixing bowl and break it up with a fork.
  2. Add the grated smoked gouda, spring onions, Dijon mustard, smoked paprika, egg yolk, 25g flour, pepper and salt if needed.
  3. Mix until the cheese is evenly distributed but do not beat it into a paste.
  4. Divide the mixture into roughly 35–40g portions, then shape each one into a squat disc about 2cm thick.
  5. Chill the shaped fritters for at least 30 minutes in the fridge, or 10–12 minutes in the freezer.
  6. Set up three shallow bowls: 50g flour in the first, beaten eggs in the second, and panko breadcrumbs in the third.
  7. Coat each fritter lightly in flour, tap off the excess, dip in egg, then press firmly into the breadcrumbs.
  8. Preheat the air fryer to 190°C for 3 minutes.
  9. Place the fritters in the basket in a single layer, leaving at least 1cm between them.
  10. Spray the tops well with oil, then air fry at 190°C for 7 minutes.
  11. Turn the fritters carefully, spray the second side, and cook for another 4–6 minutes until deep golden and crisp.
  12. Rest the fritters on a rack or plate for 2 minutes before serving.
